- 1 red, orange, or yellow bell bepper cut into 1/2″ pieces
- 3 medium stalks celery cut into 1/2″ pieces
- 1/4 cup minced cilantro
- 1 Tablespoon lemon juice
- 1 Tablespoon water
- 1 teaspoon dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 Tablespoons olive oil
- Lettuce eg. romaine or leaf lettuce
