Italian bruschetta typically features fresh tomatoes, garlic, and basil, all tossed in olive oil and served atop crisp crostini. My Mexican version, however, takes a distinct detour while honoring the core elements of garlic and olive oil.

- 2 skinny baguettes sliced into 1/4 to 1/2-inch slices
- 2 Tbs + 2 tsp extra virgin olive oil divided
- 2 cloves of garlic divided
- 1 15 oz can black beans, rinsed and drained well
- 1 cup whole kernel corn thawed if frozen and drained well
- 1 large poblano pepper seeded and diced
- ½ cup Pace® Salsa Medium
- zest of half a lime
- 2 tsp fresh lime juice
- good pinch fresh cracked pepper
- couple good pinches kosher salt
- 1 Tbs fresh oregano leaves chopped plus additional for garnish
- ½ cup finely crumbled queso fresco cheese divided
- 2 cups shredded Monterey Jack cheese

Heat your oven broiler on high.

First, prepare the crostini. Arrange the baguette slices in a single layer on a baking sheet. Brush both sides of each slice with 1 tablespoon of olive oil. Place the bread under the broiler, watching constantly, until the top side is golden brown around the edges. Flip each piece over and toast the other side until lightly browned. Remove the crostini from the oven.

Take one clove of garlic and slice it in half. Rub the cut face of the garlic clove onto the top side of each toasted crostini. Set the prepared crostini aside, but keep the used garlic clove. Combine it with the remaining whole garlic clove and mince both cloves finely.

In a medium mixing bowl, combine the minced garlic (from the previous step) with the rinsed black beans, drained corn, diced poblano pepper, Pace® Salsa, lime zest, fresh lime juice, salt, fresh cracked pepper, 1 tablespoon of chopped fresh oregano, and the remaining 2 teaspoons of olive oil. Mix thoroughly until all ingredients are well combined.

If you’re making the cheesy version, stir 1/4 cup of the crumbled queso fresco cheese into the bruschetta mixture. Spread this mixture evenly onto a thin oven-safe pan (a flat cast iron skillet works perfectly). Top generously with all of the shredded Monterey Jack cheese, as well as the remaining 1/4 cup of queso fresco. Place the pan under the broiler for one to two minutes, or until the cheese is beautifully melted, creamy, and bubbling, but not browned. Remove from the oven, sprinkle with a little extra fresh oregano for garnish, and serve immediately with your garlic-rubbed crostini. This recipe yields 6 delicious servings.
