  • 2 tsp hot sauce
  • 1 Tbs kosher salt
  • 1 ¾ to 2 lbs boneless skinless chicken thighs
  • barbecue sauce
  • honey for drizzling

For the Herbed Buttermilk Ranch:

  • 2 large or 4 regular jalapenos
  • ½ cup plain Greek yogurt
  • ½ cup buttermilk
  • ¼ cup mayonnaise
  • 1 clove garlic minced
  • pinch kosher salt
  • pinch fresh cracked pepper
  • ¼ cup generous fresh chopped herbs (see Notes)
  • juice of half a lemon

For the Waffles:

  • 2 eggs
  • 1 ¾ cup buttermilk
  • 1 ¾ cup all-purpose flour
  • 1 tsp baking soda
  • 1 ½ tsp baking powder
  • ½ tsp kosher salt
  • 4 Tbsp unsalted butter melted

Instructions

  • To marinate the chicken, combine the beer, hot sauce, cider vinegar, and kosher salt in a resealable bag or shallow dish. Add the boneless skinless chicken thighs, ensuring they are fully coated. Seal the bag or cover the dish and marinate in the refrigerator overnight, or for a minimum of 4 hours, for best flavor and tenderness.
  • Combine all ingredients for the Herbed Buttermilk Ranch (jalapeños, Greek yogurt, buttermilk, mayonnaise, minced garlic, kosher salt, fresh cracked pepper, fresh chopped herbs, and lemon juice) in a bowl. Whisk vigorously until the dressing is smooth and well combined. Taste and adjust seasonings as needed. If you prefer a thinner consistency, add additional buttermilk one tablespoon at a time until desired consistency is reached. Cover with plastic wrap and chill in the refrigerator until ready to serve. This dressing can be made a day in advance for optimal flavor development.
  • Preheat your outdoor grill or indoor grill pan to medium-high heat. Remove the chicken from the marinade, discarding the marinade. Lightly brush both sides of the marinated chicken thighs with your favorite barbecue sauce. Place the chicken on the preheated grill. Grill chicken for approximately 15-20 minutes, turning occasionally and brushing with more barbecue sauce every few minutes, until the chicken is cooked through and deeply glazed. The internal temperature of the thickest part of the chicken should reach 165°F (74°C). Remove from the grill and set aside on a cutting board to rest for 5-10 minutes. Resting allows the juices to redistribute, ensuring tender and moist chicken.
  • While the chicken is resting, prepare your waffles. In a large mixing bowl, whisk together the eggs, buttermilk, all-purpose flour, baking soda, baking powder, kosher salt, and melted unsalted butter until just combined. Be careful not to overmix the batter; a few lumps are perfectly fine and will result in a more tender waffle. Cook the waffle batter in your preheated waffle iron according to the manufacturer’s directions until they are golden brown and cooked through. Keep waffles warm in a low oven if not serving immediately.
  • To assemble and serve: Slice the rested BBQ chicken into convenient strips or chunks. Place a warm, fluffy waffle on a plate. Layer generously with the sliced Honey Beer BBQ Chicken.
