Chicken Makhani

My own love affair with exotic flavors began just a couple of months ago, during a truly memorable meal at the Sanaa restaurant, nestled within the Animal Kingdom Lodge at Disney. Up until then, I considered myself quite the culinary conservative, rarely venturing beyond familiar cuisines. Indian or African fare? Definitely not on my usual radar. But that evening, everything changed. The meal was absolutely astounding, profoundly different from anything I had ever tasted, and it left an indelible impression on me.

From the moment the warm, fluffy naan bread arrived, accompanied by an array of delightful dips, I knew I was in for a treat. Then came the African short ribs, tender and bursting with unique spices. But the true revelation was the Indian Butter Chicken – OHHH, it was so incredibly good! Each bite was a harmonious blend of creamy textures and aromatic spices, a subtle sweetness balanced by a gentle tang. It wasn’t just food; it was an awakening. A whole new world of culinary possibilities opened up for me right there. And it was this unforgettable experience that directly inspired me to recreate that magic at home, leading to the development of this very recipe for Indian Butter Chicken.

Understanding the Essence of Chicken Makhani: A Symphony of Flavors

The beauty of Chicken Makhani lies in its delicate balance of flavors. It’s not just about the chicken; it’s about the velvety, complex sauce that coats it. The “Makhani” in its name literally means “with butter,” hinting at the rich, luxurious base of the sauce. This dish typically features chicken that has been marinated (often in yogurt and spices) and then cooked, usually roasted or grilled, before being simmered in a luscious tomato-cream sauce. While traditional methods can be quite involved, our recipe simplifies the process without compromising on that authentic, restaurant-quality taste.

Key aromatic ingredients like ginger, garlic, and a blend of traditional Indian spices such as cumin, coriander, and cinnamon are crucial. These spices are gently bloomed in butter and oil, releasing their full potential before being combined with crushed tomatoes to form the robust base of the sauce. The addition of evaporated milk, plain Greek yogurt, and finely ground cashews not only contributes to the sauce’s signature creaminess but also adds subtle sweetness and helps to thicken it naturally. A squeeze of fresh lemon juice at the end brightens the entire dish, cutting through the richness and elevating the overall flavor profile. It’s truly a harmonious blend that creates an unforgettable meal.

Ingredients

  • 1 cup basmati rice
  • 2 cup Chicken Stock
  • 1 lb boneless skinless chicken thighs
  • kosher salt
  • fresh cracked pepper
  • 2 Tbsp extra virgin olive oil divided
  • 2 Tbsp unsalted butter
  • ½ large white onion diced
  • 2 cloves garlic minced
  • 2 tsp fresh grated ginger
  • ½ tsp cinnamon
  • 1 tsp coriander
  • 2 tsp cumin
  • 1 tsp paprika
  • ½ tsp cayenne pepper
  • 1 cup crushed tomatoes
  • 1 14.5 oz can diced tomatoes, drained
  • 1 cup nonfat evaporated milk
  • ¼ cup plain Greek yogurt
  • ¼ cup finely ground cashews
  • 2 tsp fresh lemon juice
  • ¼ cup fresh parsley chopped
  • Whole Wheat Naan Bread

Instructions

  • For the rice, bring the chicken stock to a boil. Add the rice, reduce heat to low, cover, and cook 18-20 minutes. Fluff rice with a fork and season will with salt. Set aside.
  • Heat oven to 400F.
  • Heat 1 tablespoon olive oil in a large nonstick skillet on high heat. Season the chicken with salt and pepper. Add the chicken to the skillet and brown on both sides (~2 minutes per side). Move the chicken to a rimmed bake sheet and put in the oven to bake until cooked through (~15 minutes). Alternatively, if your skillet can go in the oven, just put that with the chicken in the oven (I was afraid the handle on my cheap pan would melt). Once cooked, remove from the oven and set aside until cool enough to handle. Chop into bite-sized pieces.
  • Take the same large skillet and, using paper towels, wipe out the chicken fat. Heat the remaining 1 tablespoon olive oil on medium-high heat, and saute the onion until translucent and lightly browned. Add the butter, garlic, ginger, and spices. Cook briefly (~30 seconds).
  • Reduce the heat to low and add the chicken, tomatoes, evaporated milk, and yogurt. Simmer gently 15 minutes to blend flavors and thicken a bit.
  • To finish, add the cashews and lemon juice. Both are important for the flavor of this dish, but the cashews also act as a thickening agent. Serve over the basmati rice with naan bread and garnish with fresh parsley. Serves 4.

Pro Tips for the Best Homemade Butter Chicken

Achieving that perfect restaurant-quality Butter Chicken at home is easier than you think with a few key techniques:

Choosing Your Chicken

While chicken breasts can be used, boneless, skinless chicken thighs are highly recommended for Butter Chicken. Thighs are naturally more flavorful and stay wonderfully tender and moist even after simmering in the sauce. If you prefer chicken breast, ensure you don’t overcook it during the initial browning or the final simmer, as it can dry out quickly.

Building the Flavor Base

Don’t rush the sautéing of the onions, garlic, and ginger. Allowing the onions to become translucent and lightly browned develops a foundational sweetness and depth. When adding your spices (cumin, coriander, cinnamon, paprika, cayenne), cook them briefly, about 30 seconds, until fragrant. This process, known as “blooming” the spices, releases their essential oils and intensifies their flavors, making a significant difference to the final taste of your curry.

Achieving the Silky Sauce

The creaminess is a hallmark of Butter Chicken. The combination of crushed and diced tomatoes provides a rich, tangy base. Evaporated milk, rather than heavy cream, offers a lighter yet still luxurious consistency, and plain Greek yogurt adds a lovely tang and further creaminess. For an extra velvety texture and a subtle nutty flavor, finely ground cashews are essential. Blend them into a fine powder before adding to ensure a smooth sauce. If you find your sauce isn’t as smooth as you’d like, you can carefully blend a portion (or all) of it with an immersion blender before adding the chicken back in.

Don’t Skip the Lemon Juice!

The fresh lemon juice added at the very end is crucial. It brightens the rich, savory flavors of the curry, providing a necessary acidic counterpoint that prevents the dish from tasting too heavy. It’s a small addition that makes a big impact on the overall balance and vibrancy of the Butter Chicken.

Serving Suggestions for Your Delicious Indian Butter Chicken

Indian Butter Chicken is a complete meal on its own, but it truly shines when served with traditional accompaniments that help soak up all that incredible sauce:

  • Basmati Rice: Fluffy, aromatic basmati rice is the classic pairing. Its delicate flavor perfectly complements the rich curry. Our recipe includes instructions for perfectly cooked basmati rice using chicken stock for added flavor.
  • Naan Bread: Warm, soft naan bread (especially whole wheat naan, as linked in the recipe) is indispensable. It’s ideal for scooping up every last drop of the delectable sauce. You can also serve it with roti, chapati, or paratha.
  • Fresh Garnishes: A sprinkle of fresh chopped parsley (or cilantro, for a more traditional touch) adds a pop of color and freshness. A swirl of extra Greek yogurt or a drizzle of melted butter can also enhance the presentation and flavor.
  • Side Dishes: For a more elaborate meal, consider serving a simple cucumber raita (yogurt with cucumber and spices) or a fresh kachumber salad (diced cucumber, tomato, onion, and lemon juice) to provide a refreshing contrast to the richness of the curry.

Storage and Reheating Your Homemade Butter Chicken

One of the best things about homemade Butter Chicken is how well it stores, often tasting even better the next day as the flavors meld and deepen.

  • Refrigeration: Store any leftover Butter Chicken in an airtight container in the refrigerator for up to 3-4 days.
  • Freezing: This dish freezes beautifully. Once completely cooled, transfer it to freezer-safe containers or heavy-duty freezer bags, leaving a little headspace. It can be frozen for up to 2-3 months. Thaw overnight in the refrigerator before reheating.
  • Reheating: Gently reheat Butter Chicken on the stovetop over low to medium heat, stirring occasionally, until it is heated through. If the sauce has thickened too much during storage, you can add a splash of chicken stock or milk to achieve the desired consistency. Avoid reheating at very high temperatures, as this can sometimes cause the sauce to separate.

Common Questions About Butter Chicken

Is Butter Chicken spicy?

Traditionally, Indian Butter Chicken is mildly spiced and leans more towards rich and creamy rather than fiery hot. The cayenne pepper in this recipe provides a gentle warmth. If you prefer more heat, feel free to increase the amount of cayenne pepper or add a finely chopped green chili during the sautéing of the onions.

What’s the difference between Butter Chicken and Chicken Tikka Masala?

While often confused, Butter Chicken and Chicken Tikka Masala are distinct dishes. Both feature chicken in a creamy tomato sauce, but Butter Chicken (Murgh Makhani) typically has a sweeter, milder flavor profile with a richer, buttery sauce. Chicken Tikka Masala often uses tandoor-cooked chicken pieces (tikka) and its sauce tends to be spicier and more intensely flavored with a wider array of spices, sometimes with a slightly chunkier texture and less emphasis on butter.

Can I make this dairy-free?

While the original recipe relies on dairy for its characteristic creaminess (butter, evaporated milk, Greek yogurt), you can explore dairy-free alternatives. Use a plant-based butter substitute, coconut milk or cashew cream instead of evaporated milk, and a dairy-free plain yogurt alternative. The flavor profile will shift slightly but can still be very delicious!
