Crafting the Irresistible Cheesy Filling: The Heart of Your Crepes
The secret to truly extraordinary savory crepes lies in their filling, and for this recipe, we begin with a gloriously delicious and perfectly smooth cheesy sauce. This isn’t just any cheese sauce; it’s a foundation of flavor that elevates every bite. The process starts with a classic roux – a blend of butter and flour cooked until golden. This simple step is crucial as it creates the base for our bechamel, ensuring a thick, luxurious consistency for the sauce. Once the roux is ready, we gradually whisk in milk, cooking until the mixture thickens beautifully and coats the back of a spoon.
After achieving that perfect creamy consistency, we introduce just a few key ingredients to enhance its flavor profile: a touch of salt, a pinch of freshly cracked pepper, and a hint of Dijon mustard for a subtle tang that complements the richness of the cheese. Then comes the star of the show: two generous cups of shredded cheese. For this recipe, I opted for shredded Vermont sharp white cheddar. Why white cheddar? Firstly, it’s undeniably yummy, offering a robust, tangy flavor that stands up beautifully to the ham and peas. Secondly, I wanted to maintain a pristine, elegant white color for the sauce, which white cheddar perfectly achieves. This aesthetic choice makes the dish feel even more refined and appealing.
The Perfect Pairings: Ham and Spring Peas
Once our exquisite cheese sauce is velvety smooth and ready, it’s time to fold in our delightful additions: ham and peas. The inclusion of peas is a no-brainer for a spring-themed dish. Their bright green color and sweet, delicate flavor simply scream “spring!” They add a wonderful burst of freshness and a pleasant textural contrast to the creamy sauce. You can use fresh or frozen peas; if using frozen, just ensure they are thawed before adding.
For the ham, I chose to use thinly sliced deli ham, and there’s a good reason for this specific selection. You might ask, “Why not diced ham steak or leftover holiday ham?” Well, the delicate nature of crepes pairs exquisitely with super skinny deli meat. The thinness of the ham ensures that the filling remains light and elegant, preventing the crepes from becoming overly bulky or heavy. It creates a harmonious balance, allowing each component to shine without overpowering the others. The result is a refined and delicate bite every time.
The deli meat I specifically used, Castle Wood Reserve®, was an absolute hit with my family. They raved about its flavor, and frankly, while I was busy preparing the recipe, they were happily munching on the rest of the package right then and there! Castle Wood Reserve® is a fantastic line of deli meats that was new to me when I discovered it in the deli section at Walmart. What’s particularly great about their products is that they contain no binders, MSG, or unnecessary additives. This makes them an excellent choice for a quick recipe hack like these crepes, where you want quality ingredients with minimal fuss. Beyond crepes, its premium quality makes it perfect for a charcuterie board alongside various cheeses, olives, and other gourmet delights.
Assembling and Baking Your Savory Crepes
Moving on, once our rich, cheesy ham and pea filling is perfectly prepared, the assembly process is incredibly simple. We’re going to roll these crepes enchilada-style. Now, when it comes to crepes themselves, you have options. Sometimes, I enjoy the process of making crepes from scratch, and I’ve included a link to my preferred crepe recipe in the instructions below for those who want to try their hand at it. However, let’s be real – oftentimes, particularly when entertaining or on a busy weeknight, time is a precious commodity. For those moments, I have absolutely no shame in buying pre-made crepes. Yes, you can find them readily available in the produce section of most grocery stores, saving you a significant amount of time and effort without compromising on the quality of your meal. It’s a fantastic shortcut that allows you to enjoy this elegant dish even on your busiest days.
Once you’ve filled and rolled all your crepes, simply arrange them snugly in a large baking dish. Then, they go into the oven to bake until they are thoroughly heated through and the cheese is wonderfully melted and bubbly. While the crepes are warming, you can quickly whip up a simple yet flavorful Dijon cream sauce for topping. This sauce, a blend of sour cream, the remaining Dijon mustard, and a touch of milk, adds a bright, tangy finish that perfectly complements the rich filling. And just like that, We. Are. Done. See? Totally easy, yet truly and remarkably delicious. The combination of textures and flavors is simply divine, making it a meal that feels special but requires minimal fuss.
So there you have it, folks! An elegant, yet incredibly easy Ham, Peas, and Cheese Crepes recipe, filled to the brim with tender ham, sweet spring peas, and a lusciously cheesy sauce. Finished with a bright Dijon cream drizzle, this dish is an impressive and delicious spring go-to that is perfect for any occasion, from casual family dinners to more formal celebratory gatherings. Prepare to receive rave reviews!

Ingredients
- 2 Tbsp unsalted butter
- 2 Tbsp all-purpose flour
- 1 cup milk
- ½ tsp kosher salt
- pinch fresh cracked pepper
- 2 ½ tsp Dijon mustard, divided
- 2 cups shredded Vermont sharp white cheddar cheese
- 8 oz cooked ham, finely chopped (deli ham recommended)
- 1 cup frozen peas, thawed
- 10 crepes, purchased or homemade
- ½ cup sour cream
- 2 Tbsp milk
Instructions
-
Preheat your oven to 350°F (175°C).
-
In a medium saucepan, melt the butter over medium-high heat. Add the flour and cook, stirring constantly, for about 1 minute to create a roux. Gradually whisk in the milk and continue to cook for another minute or so, until the mixture thickens enough to coat the back of a wooden spoon, forming a smooth bechamel sauce. Remove the saucepan from the heat. Stir in the salt, pepper, 1/2 teaspoon of Dijon mustard, and the shredded white cheddar cheese. Stir until most of the cheese has melted and the sauce is creamy (don’t worry if there are a few lumps, they will melt in the oven). Gently fold in the chopped ham and thawed peas. Taste and adjust seasoning as needed.
-
Lay a crepe flat on a clean surface. Spoon approximately 1/4 cup of the ham and cheese filling down the center of the crepe. Carefully roll up the crepe, enchilada-style, and place it seam-side down in a large baking dish. Repeat this process with the remaining crepes and filling until all are rolled and arranged in the dish.
-
Bake the crepes in the preheated oven at 350°F (175°C) for 15-20 minutes, or until the filling is heated through and bubbling gently.
-
While the crepes are baking, prepare the Dijon cream sauce. In a small bowl, combine the sour cream, the remaining 2 teaspoons of Dijon mustard, and 2 tablespoons of milk. Whisk until smooth. Serve the warm crepes drizzled generously with this creamy Dijon sauce. Yields: 5 servings.
