Why Chicken Pizzaiola is a Must-Try: A Delicious One-Pan Italian Meal
Chicken Pizzaiola holds a special place in my heart, especially when I’m cooking for a crowd. Its magic lies in being a delightful **one-pan chicken dish**, which means less time scrubbing pots and more time enjoying company! This incredible recipe delivers robust flavors and satisfying textures in under an hour, making it an ideal choice for busy weeknights or relaxed weekend gatherings.
While the more traditional “Steak Pizzaiola” is widely recognized, the chicken version offers a lighter, yet equally flavorful alternative. The concept of “Pizzaiola” refers to the savory tomato, garlic, and oregano sauce, reminiscent of pizza toppings, creating a comforting and familiar taste. This versatile dish pairs beautifully with a variety of sides. For a complete and wholesome meal, consider serving it with our crispy Garlic Parmesan Green Beans or a vibrant Italian Lacinato Kale, adding both color and nutrition.
The beauty of this recipe extends beyond its convenience; it’s a dish that truly brings people together. The tender chicken, the aromatic sauce, and the gooey melted cheese create a symphony of flavors that everyone at the table will appreciate. It’s comfort food at its finest, embodying the warmth and generosity of Italian cuisine.
Essential Ingredient Notes and Smart Substitutions for Chicken Pizzaiola

Crafting the perfect Chicken Pizzaiola begins with understanding your ingredients. Here’s a breakdown of key components and flexible substitutions:
- Peeled Tomatoes, Pureed: While a can of store-bought pureed tomatoes works in a pinch, I highly recommend pureeing whole peeled tomatoes yourself. This method yields a fresher, more vibrant flavor and avoids the often-gritty texture found in some pre-pureed cans. Look for high-quality San Marzano tomatoes for the best results.
- Vodka: This ingredient is used for deglazing, helping to lift all those delicious browned bits from the bottom of the pan and infuse them into the sauce. Vodka provides a cleaner, less sweet finish compared to wine. However, if you prefer, an equal amount of dry white wine (like Pinot Grigio or Sauvignon Blanc) can be substituted. It will impart a slightly fruitier note, but both options are excellent.
- Chicken Breast: For the most tender and evenly cooked chicken, opt for boneless, skinless chicken breasts. Butterfly them first, then gently pound the meat to an even thickness (about ¼ to ½ inch). This ensures quick cooking and a consistently tender texture, preventing dry spots. Chicken thighs can also be used for a richer flavor, though cooking times may vary slightly.
- Garlic: Using whole cloves of garlic for sautéing is a trick that infuses the oil and sauce with deep garlic flavor without risking bitterness from burnt minced garlic. The cloves can be removed before serving, or left in for those who enjoy soft, cooked garlic. Feel free to slightly smash them before adding to release more aroma.
- Mozzarella: Shredded mozzarella is your best friend here. Its finely grated form melts beautifully and quickly, creating that signature gooey, cheesy topping this dish is known for. While fresh mozzarella is delicious, it contains more moisture and might not melt as seamlessly or create the same blanket of cheese. Save fresh mozzarella for Caprese salads!
- Bell Peppers: I like using a combination of green and red bell peppers for both flavor and visual appeal. Green peppers offer a slightly more pungent, earthy taste, while red peppers are sweeter. Slice them thinly so they cook quickly and retain a slight crisp-tender bite, adding a wonderful textural contrast to the sauce.
- Fresh Basil & Dried Oregano: These classic Italian herbs are crucial for the authentic flavor of pizzaiola. Fresh basil is added towards the end to preserve its delicate aroma, while dried oregano is cooked into the sauce, allowing its robust flavors to deepen. Don’t skimp on these!

Crafting the Perfect Chicken Pizzaiola: A Step-by-Step Guide

Once the cheese is perfectly melted and bubbly, carefully remove the Chicken Pizzaiola from the pan and prepare to serve this magnificent dish. It’s absolutely divine served over your preferred long pasta, like classic spaghetti or delicate angel hair. Alternatively, for a delightful twist, pair it with our Crispy Garlic Parmesan Potatoes or simple, fluffy white rice. Don’t forget a sprinkle of fresh chopped parsley for a pop of color and freshness!
Pro-Tips for Perfect Chicken Pizzaiola Every Time
- Timing is Key for Dredging: Never egg and flour your chicken in advance. The flour will quickly absorb moisture from the egg and chicken, becoming soggy and pasty. This prevents a crispy crust from forming during frying. Always dredge just a few minutes before you’re ready to cook.
- Mastering the Par-Fry: Remember, you are only *par-frying* the chicken. The goal here is to achieve a beautiful golden-brown color and a crispy exterior, not to cook the chicken all the way through. Ensure your pan is at a high heat before adding the chicken. Sear each side for about a minute or so until nicely browned. Once done, remove the chicken and place it on a cooling rack, not on a plate, to prevent it from steaming and losing its crispness. It will finish cooking gently in the simmering sauce.
- Don’t Overcrowd the Pan: When par-frying the chicken, work in batches if necessary. Overcrowding the pan will lower the oil temperature, leading to steamed chicken instead of a crispy, golden-brown crust. Give each piece enough space to achieve that perfect sear.
- Taste and Adjust Seasoning: Always taste your sauce before adding the chicken and again before serving. Tomatoes can vary in acidity and sweetness, so you might need to adjust the salt, pepper, or even a tiny pinch of sugar to balance the flavors perfectly.
- Fresh Herbs Make a Difference: While dried oregano is essential for the sauce, don’t skip the fresh basil and parsley. Fresh herbs add a vibrant, aromatic lift that dried herbs simply can’t replicate. Stir in fresh basil towards the end of cooking and garnish with fresh parsley just before serving.

Chicken Pizzaiola truly shines as a fantastic family dinner option. Its one-pan nature ensures minimal cleanup, and the entire dish comes together in under an hour, making it perfect for those busy weeknights when you crave something homemade and comforting. I absolutely adore easy, family-style one-pan (or one-pot) meals like this. Chicken Pizzaiola is incredibly versatile and pairs well with a variety of sides. Here are some of our favorite recommendations:
- Pasta: Classic spaghetti or delicate angel hair pasta are traditional choices, perfectly soaking up the rich tomato sauce. Penne or rigatoni also work wonderfully.
- Rice: For a gluten-free option or simply a change of pace, serve it over fluffy white rice or a savory wild rice blend.
- Potatoes: Our Crispy Garlic Parmesan Potatoes provide a satisfying crunch and complementary flavors. Roasted or mashed potatoes are also excellent choices.
- Crusty Bread: Don’t forget a loaf of warm, crusty Italian bread to sop up every last drop of that amazing sauce. Garlic bread is always a hit!
- Green Salad: A simple, fresh green salad with a light vinaigrette makes a perfect counterpoint to the richness of the dish.
- Vegetables: Alongside our Garlic Parmesan Green Beans or Italian Lacinato Kale, consider steamed broccoli, sautéed spinach, or asparagus.
Make Ahead & Storage Tips
Chicken Pizzaiola is a fantastic dish for meal prepping or enjoying as leftovers:
- Storage: Allow the dish to cool completely before transferring it to an airtight container. Store in the refrigerator for up to 4 days.
- Freezing: You can also freeze Chicken Pizzaiola! Place cooled leftovers in a freezer-safe container or bag. It will keep well in the freezer for up to 2-3 months. Thaw overnight in the refrigerator before reheating.
- Reheating: For best results, reheat Chicken Pizzaiola in a saucepan over medium-low heat on the stovetop. Add a splash of water or chicken broth if the sauce seems too thick. Stir occasionally until heated through. You can also reheat individual portions in the microwave, but the stovetop method generally yields better texture for the chicken and sauce.
Chicken Pizzaiola Recipe FAQs
The heart of Chicken Pizzaiola sauce is typically made from pureed tomatoes, bell peppers (often red and green), fragrant garlic, and aromatic dried oregano. It’s often enhanced by deglazing the pan with a spirit like vodka or a dry white wine, which adds depth and complexity to the rich, savory base.
Chicken Pizzaiola is incredibly versatile! Traditionally, it’s served over long pasta shapes like angel hair or spaghetti, allowing the pasta to absorb the delicious sauce. However, it’s also excellent with fluffy white rice, creamy polenta, or crispy roasted potatoes. For a complete meal, consider adding a fresh green salad or some sautéed Italian greens on the side.
To store Chicken Pizzaiola, allow it to cool completely, then transfer it to an airtight container and refrigerate for up to 4 days. For reheating, the best method is to gently warm it in a saucepan over medium heat on the stovetop. You can add a tablespoon or two of water or chicken broth if the sauce has thickened too much. Stir occasionally until the dish is heated through and the flavors are re-awakened. It can also be frozen for longer storage (up to 2-3 months) and thawed before reheating.
Absolutely! While vodka or white wine adds a layer of depth and helps with deglazing, you can easily omit it. For deglazing, simply use a splash of chicken broth or even water, scraping up all the browned bits from the pan. The sauce will still be wonderfully flavorful with the rich tomatoes, peppers, and herbs.
Boneless, skinless chicken breasts are typically used, prepared as thin cutlets (butterflied and pounded) for quick and even cooking. This ensures the chicken remains tender and absorbs the sauce’s flavors beautifully. You can also use boneless, skinless chicken thighs for a richer, more succulent result, though cooking times might need slight adjustment.

Chicken Pizzaiola

Pin Recipe
Equipment
-
1 large saucepan
Ingredients
- 3 chicken breasts, sliced in half to make thin cutlets
- 1 28 oz can tomato puree, or whole peeled tomatoes pureed I prefer to puree whole peeled tomatoes for a smoother texture over canned puree.
- 6 cloves garlic, whole
- 1 green pepper, sliced
- 1 red pepper, sliced
- 1 tablespoon oregano
- 1 teaspoon salt
- ⅓ cup vodka
- 1 cup mozzarella, shredded
- 6 basil leaves
- chopped parsley for garnish
- 1 egg
- ½ cup flour
- salt and pepper for chicken
- 3 tablespoon extra virgin olive oil
Instructions
-
Season chicken cutlets with salt and pepper. Dip each cutlet in beaten egg, then dredge in flour, ensuring a thin, even coating. In a large saucepan, heat 2 tablespoons of extra virgin olive oil over medium-high heat. Working in batches if needed, par-fry the chicken until beautifully golden brown on both sides. Remove and set aside on a cooling rack; the chicken will finish cooking in the sauce.
-
After frying all chicken, add another tablespoon of olive oil to the pan (if necessary). Add the sliced bell peppers and whole garlic cloves. Sauté for approximately 5 minutes until the peppers are glistening, brightly colored, and slightly tender-crisp with minimal caramelization. Pour in the vodka to deglaze the pan, scraping up any delicious browned bits from the bottom. Allow the vodka to simmer and reduce until a thickened glaze forms.
-
Stir in the pureed tomatoes, fresh basil leaves, salt, and dried oregano. Bring the sauce to a slow boil, then reduce the heat to a gentle simmer. Carefully place the par-fried chicken cutlets on top of the simmering sauce. Cover the pan and let it cook for 10 minutes, allowing the chicken to finish cooking and absorb the flavors. Then, uncover, sprinkle the shredded mozzarella cheese over the chicken, cover again, and simmer for another 5 minutes until the cheese is perfectly melted and bubbly.
-
Remove the pan from the heat and serve immediately. This delightful Chicken Pizzaiola is best enjoyed with your favorite long pasta, such as spaghetti or angel hair, allowing the flavorful sauce to cling to every strand. Garnish with fresh chopped parsley.
Notes
- When par-frying the chicken, ensure your heat is high to achieve a quick, golden crust without cooking the chicken through. Fry for about a minute per side, then transfer to a cooling rack to maintain crispness while you prepare the sauce. This preliminary frying creates essential flavor and texture.
- Do not dredge the chicken too far in advance. The flour will absorb moisture from the chicken and egg, becoming gummy and preventing a truly crisp exterior when fried. Prepare your chicken cutlets, then coat them in flour just before they hit the hot oil.
